On a recent trip to Zanzibar I enjoyed a uniquely refreshing salad dressing made with passion fruit. Passion fruit…who knew? I usually find fruit based salad dressings too sweet for my tastes, but passion fruit has a strong flavour with a subtle tartness that nicely contrasts a hearty salad decked with rich ingredients like avocado, olives, and shrimp.
Juice and seeds of 10 passion fruit
5 tbs of American-style mustard
2 tbs freshly squeezed lime juice
2 tbs Olive Oil
Blend all together.
Serve as a side dressing in a small jug – with seafood or smoked chicken salads.
Keeps in the fridge for 3 days.
