Eating a healthy breakfast can be challenging when early mornings leave little time for preparation. This tasty and nutritious overnight oats recipe can be made entirely the night before.
I’ve adjusted the original recipe to include a couple Tanzanian produced “super-foods” that you’ve seen on the shop shelves but maybe didn’t know exactly how to use them.
First, Baobob Powder has nourished people for centuries and is one of the planet’s highest plant source of calcium as well as being an excellent source of fibre.
Second, Moringa Powder is a rich source of protein (unusual for a plant), iron, vitamin A and K. It is also high in fiber, a source of vitamin E, calcium and magnesium.
I like to prepare dry ingredients for the week in advance and add the wet ingredients the night before you eat.
1⁄4 cup rolled oats
1 tsp coco powder
1 tsp shredded coconut
1 tsp baobob powder
1 tsp moringa powder
1/2 tsp of cinnamon
1⁄2 cup milk of your choice (unsweetened almond milk offers a nice nutty taste)
1⁄2 Tbs peanut, cashew or almond butter
1⁄4 cup berries
2 tsp honey
Optional Ingredients if you can find them in Dar:
1 scoop Protein Powder
3 tsp chia seeds
Mix ingredients together in a jar, cover and let sit overnight in the fridge. Before eating stir it up and Presto! You have a delicious, healthy, filling breakfast to go.
Top with 1 tbs granola for an added crunch!
